Raspberry peanut butter bliss balls

I must confess, it took me years to figure out why people love the PB+J combo (it’s pretty American right? I was a peanut butter + honey kid growing up) but now i’m a convert. Tart berries combined with creamy peanut butter is pretty genius. But these are no sad PB&J sandwiches – these are our perfectly tart and creamy protein-packed bliss balls which are a great one handed snack for any time of the day.

These freeze easily and make quite a large batch – so I actually save half for my family to eat in the next 2-3 days (just stored in a large jar in the fridge) and then I pop the other half in an airtight container in the freezer to appease the toddler or husband when it comes to snack time. Or you know, you could drop half off to a hungry expectant or breastfeeding mama in their postpartum bubble that could use some support.

They are naturally vegetarian and vegan friendly, swap the oats out for wheat-free oats to make them technically gluten free. Make sure that you’re using a good quality peanut butter (I am partial to the Mayvers dark roast) along with organic oats and berries if you can too.

Raspberry peanut butter bliss balls

Such an easy and delicious afternoon snack, which is both tart and creamy

Servings 18 bliss balls

Equipment

  • Food processor / mixer or a large mixing bowl

Ingredients
  

  • 3 heaped tablespoons smooth natural peanut butter
  • 2 cups organic rolled oats
  • 1 cup walnuts chopped finely
  • 1/2 cup dessicated coconut or coconut flour
  • 3 tablespoons of chia seeds
  • 2 scoops of protein powder vanilla or berry
  • Pinch of fine salt
  • 1 cup of frozen raspberries defrosted
  • 1 cup of filtered water

Instructions
 

  • Add all of your dry ingredients into your food processor/mixing bowl and combine well.
  • Add your smooth peanut butter, raspberries (defrosted) and water – then combine again till you have a nice consistent mixture.
  • Use a tablespoon to portion out servings and roll them into a ball shape in the palm of your hand.
  • Let them set in the fridge for approx 15 mins, before enjoying with a cuppa.

Notes

I find that allowing the raspberries to defrost brings more colouring to the mixture (nice shade of pink) and more consistent berry flavor. You can throw a handful of frozen ones in right before you roll them all together so you get some extra pops of berries here and there too. 
Prep Note: if you don’t have a food processor on hand that is totally fine, just chop your walnuts finely beforehand. If using a mixing bowl to combine everything, make sure its a large bowl so that you can combine it all well when you add the wet ingredients.
