As oranges start to come into season, you’re probably going to end up with a bowl full from your neighbour or friend and get stuck wondering what you could do with them. These walnut, orange and cranberry energy balls taste like Christmas to me – something about the orange, cranberry and light coating of coconut that is SO nostalgic. Toddler approved thanks to the sweetness of the medjool dates.
These freeze easily, so make a full batch and freeze half for later if you don’t think you’ll get through them in 2-3 days. Believe me, you will thank yourself later. Even better yet, pop a handful in a jar to share with a friend.
Walnut, orange and cranberry bites
These walnut, orange and cranberry bites are a great snack for work, lunch boxes or dropping to a friend. Freeze for easy access to snacks next week!

- Food Processor
Ingredients
- 2 cups rolled oats
- 2 cups walnuts
- 1 cup desiccated coconut plus extra for coating if desired
- 1/2 cup dried cranberries
- 4 pitted medjool dates
- 1 scoop of vanilla protein powder
- Pinch of salt
- 1 orange, zested and juiced
- 1 tsp of water if required
Instructions
- Place all of the dry ingredients into a food processor and pulse until they are well combined.
- Add in the juice and zest of the orange then process again till the mixture comes together. If it’s still a little dry, just add in a splash of water, a spoonful at a time till it holds together.
- Remove the blade from your food processor, then grab a tablespoon and use it to divvy up the mixture.
- Shape the scoops in your hands and when they are nice and rounded, roll in the desiccated coconut (optional).
- Store in an airtight container for 3-4 days and freeze any leftovers.
Notes
Gluten free Option: swap your oats for wheat free oats if you are hoping to make these gluten free. You can also press the mixture into a lined container if you would prefer to cut than hand form them.
