Raspberry peanut butter bliss balls

Such an easy and delicious afternoon snack, which is both tart and creamy

Equipment

  • Food processor / mixer or a large mixing bowl

Ingredients
  

  • 3 heaped tablespoons smooth natural peanut butter
  • 2 cups organic rolled oats
  • 1 cup walnuts chopped finely
  • 1/2 cup dessicated coconut or coconut flour
  • 3 tablespoons of chia seeds
  • 2 scoops of protein powder vanilla or berry
  • Pinch of fine salt
  • 1 cup of frozen raspberries defrosted
  • 1 cup of filtered water

Instructions
 

  • Add all of your dry ingredients into your food processor/mixing bowl and combine well.
  • Add your smooth peanut butter, raspberries (defrosted) and water - then combine again till you have a nice consistent mixture.
  • Use a tablespoon to portion out servings and roll them into a ball shape in the palm of your hand.
  • Let them set in the fridge for approx 15 mins, before enjoying with a cuppa.

Notes

I find that allowing the raspberries to defrost brings more colouring to the mixture (nice shade of pink) and more consistent berry flavor. You can throw a handful of frozen ones in right before you roll them all together so you get some extra pops of berries here and there too. 
Prep Note: if you don't have a food processor on hand that is totally fine, just chop your walnuts finely beforehand. If using a mixing bowl to combine everything, make sure its a large bowl so that you can combine it all well when you add the wet ingredients.
