Here’s a weekend baking treat for you – packed with hidden fruit and veg but you wouldn’t know it! It’s both gluten and dairy free – also refined sugar free. Gooey, chocolate-y and actually good for you? Winning combo right there.
Salted chocolate sweet potato brownie

Ingredients
- 1 large sweet potato (approx 1 1/2 cups cooked and mashed) peeled and chopped roughly
- 2 apples (approx 1/2 cup cooked and mashed) peeled and chopped roughly
- 1/2 cup pitted dates rehydrated in boiling water and drained
- 1/2 cup almond milk (or other milk)
- 1 tsp vanilla paste
- 1/2 cup buckwheat flour (50g) Can swap for other gluten free flour
- 1/2 cup cacao powder (50g)
- 1 pinch pink salt (or other fine salt)
- 1 tbsp olive oil
- 2 tbsp pure maple syrup
- 1 pinch salt flakes (optional for top)
Instructions
- Preheat fan forced oven to 180℃.
- Steam your chopped and peeled sweet potato and apples till they are soft, then set aside to cool.
- Pour boiling water over dates and put aside to soften for 5 mins, then drain.
- Add the sweet potato, apples, drained dates, almond milk, pinch of pink salt and vanilla paste in food processor. Blitz till smooth.
- Place the blitzed mixture in a large bowl (or mixer), add the rest of the ingredients and stir well to combine.
- Pour mixture into oven safe dish lined with baking paper or a silicone mat. Bake for 25-30 mins. They should be slightly gooey but also firm.
- Remove from oven and allow to cool on a wire rack. Slice into 12, sprinkle with some salt flakes (optional) and enjoy!
