Walnut, orange and cranberry bites

These walnut, orange and cranberry bites are a great snack for work, lunch boxes or dropping to a friend. Freeze for easy access to snacks next week!

Equipment

  • Food Processor

Ingredients
  

  • 2 cups rolled oats
  • 2 cups walnuts
  • 1 cup desiccated coconut plus extra for coating if desired
  • 1/2 cup dried cranberries
  • 4 pitted medjool dates
  • 1 scoop of vanilla protein powder
  • Pinch of salt
  • 1 orange, zested and juiced
  • 1 tsp of water if required

Instructions
 

  • Place all of the dry ingredients into a food processor and pulse until they are well combined.
  • Add in the juice and zest of the orange then process again till the mixture comes together. If it’s still a little dry, just add in a splash of water, a spoonful at a time till it holds together.
  • Remove the blade from your food processor, then grab a tablespoon and use it to divvy up the mixture.
  • Shape the scoops in your hands and when they are nice and rounded, roll in the desiccated coconut (optional).
  • Store in an airtight container for 3-4 days and freeze any leftovers.

Notes

Gluten free Option: swap your oats for wheat free oats if you are hoping to make these gluten free.
You can also press the mixture into a lined container if you would prefer to cut than hand form them.
