Walnut, orange and cranberry bites
These walnut, orange and cranberry bites are a great snack for work, lunch boxes or dropping to a friend. Freeze for easy access to snacks next week!
Prep Time 10 minutes mins
- 2 cups rolled oats
- 2 cups walnuts
- 1 cup desiccated coconut plus extra for coating if desired
- 1/2 cup dried cranberries
- 4 pitted medjool dates
- 1 scoop of vanilla protein powder
- Pinch of salt
- 1 orange, zested and juiced
- 1 tsp of water if required
Place all of the dry ingredients into a food processor and pulse until they are well combined.
Add in the juice and zest of the orange then process again till the mixture comes together. If it’s still a little dry, just add in a splash of water, a spoonful at a time till it holds together.
Remove the blade from your food processor, then grab a tablespoon and use it to divvy up the mixture.
Shape the scoops in your hands and when they are nice and rounded, roll in the desiccated coconut (optional).
Store in an airtight container for 3-4 days and freeze any leftovers.
Gluten free Option: swap your oats for wheat free oats if you are hoping to make these gluten free.
You can also press the mixture into a lined container if you would prefer to cut than hand form them.
