Raw Chocolate Rocky Road
This "healthy" rocky road is such a winner for a gift or snack in the festive season!

- 1/2 cup walnuts chopped roughly
- 1/2 cup coconut flakes
- 1/2 cup cranberries
- 1/2 cup quinoa puffs
- 1/2 cup marshmallows cut into quarters with scissors (or use mini marshmallows)
- Pinch of dried rosemary (or 1 sprig of fresh, chopped)
- 3/4 cup cacao powder
- 3/4 cup coconut oil melted
- 5 tablespoons of maple syrup
- Pinch of salt
Preheat a frying pan to medium and toast your walnuts till they are lightly browned.
Add the coconut flakes and toast till they’re also lightly browned (be careful, this happens quick!), then add the rosemary. When its all fragrant and toasty, pop onto a plate and put aside to cool.
Combine your melted coconut oil, maple syrup and cacao powder in a large heat proof bowl. Stir until there are no lumps from the powder left.
Add all of the dry ingredients to the bowl and stir well until everything is well coated in chocolate.
Pour into a baking paper lined container/tin and pop in the fridge for 45 mins to set.
Remove the block from the container then cut into bite sized chunks with a large knife. Store in an air-tight glass container in the fridge to enjoy/gift as you like.
You can really add anything into the rocky road, I just love this combo!
If your liquid chocolate mixture starts to harden before you place all of your ingredients in, pop it in the microwave for 10-15 seconds to liquify.
Note: recommend storing this in the fridge as the coconut oil base will melt on a hot day.
