No bake spiced carrot cake bars

Equipment

  • Food Processor
  • Medium sized tray or container
  • Baking paper

Ingredients
  

  • 1 medium carrot
  • 1/2 cup dried pitted dates (approx 10)
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 1/2 cup desiccated coconut
  • 1 cup almond flour
  • 1 cup oats
  • 1 heaped teaspoons powdered ginger
  • 2 heaped teaspoons cinnamon
  • Pinch of salt
  • 1 scoop vanilla protein powder
  • 1/2 cup water

Instructions
 

  • Soak your dates for a few minutes in a cup of boiling water to start.
  • Blitz your carrot in the food processor to a fine chopped consistency.
  • Drain the water and then add the pitted dates to the food processor, blitzing till smooth.
  • Then add the rest of your dry ingredients (literally everything expect the water) into the food processor and blitz till an even chopped consistency.
  • Add water to the mixture and blitz again briefly to combine. It should be hold together when you roll into a ball but not too wet that it sticks to your fingers.
  • Simply press the mixture into a container or tray lined with baking paper with a spoon/spatula. Let them set for at least 5 mins in the fridge before slicing into bite-sized bars. Too easy!

Notes

NOTES
You can actually do this without a food processor if you want, simply grate the carrot and chop the walnuts and soaked dates finely. I like to use a processor for a nice smooth consistency and to make it more toddler friendly.
If your food processor struggles to mix/combine everything when adding the water - simply transfer to a larger bowl and combine by hand with a spatula before transferring into the container. 
OPTIONAL
If you want to bake this one, add a splash of extra water and bake for 20 minutes on 180° till golden on top. Let cool, then slice & enjoy!
