Chocolate Crackle Bites
These healthy, crunchy chocolate crackle bites are a great one handed snack, delicious straight out of the fridge or in a snack box to keep you fulled up and your sweet tooth satisfied.

- 1 cup mixed nuts I've used walnuts and brazil nuts
- 1 cup hulled buckwheat Raw or Activated - see notes below
- 2 scoops chocolate protein powder
- 1 tablespoon cacao powder
- Pinch of salt
- 2 tablespoons maple syrup
- 3 tablespoons smooth peanut butter
- 2 tablespoons coconut oil melted
Add the mixed nuts, buckwheat, protein powder, salt and cacao powder into a food processor and blitz until you have a fine crumb-like texture.
Now add the maple syrup, peanut butter and melted coconut oil to the processor and blitz again till the mixture comes together well.
Use a spoon to portion out the mixture and then form into balls with your hands.
Allow to set in the fridge for an hour and then enjoy!
Remember to melt your coconut oil in the microwave for 30 seconds - 1 minute if it started off solid. It will harden up again in the fridge!
Note on Buckwheat: You can use both raw buckwheat and activated buckwheat in this recipe. I find that activated buckwheat is a bit crunchier and lighter (tastes more like a chocolate crackle) raw buckwheat groats are a but nuttier (taste more like chocolate spider). Both can be purchased from your local supermarket or health food store.
