Add all of your dry ingredients (everything except blueberries, lemon juice and water) to the food processor and blitz to an even consistency.
Add the blueberries, lemon juice and water, then blitz again to combine. The mixture should come together and will be sticky, but not too wet. If its too sticky to manage, add a bit more almond flour or coconut and mix with a spatula.
Remove blade from food processor and scoop out tablespoon sized chunks of the mixture and roll between your hands to form a ball.
Roll the ball in extra desiccated coconut in your large container/plate - then refrigerate for an hour or so till they firm up. Store in an airtight container for 2-3 days or freeze.
Notes
TIP: If you're making these for a new mum - you can also optionally add 1 tbsp brewers yeast to the mix which is a galactagogue (like oats) which is beneficial for milk production.
